- 2 jalapeños
- 1/2 white onion
- 7 medium tomatillos
- 1 garlic clove
- 1 cup cilantro
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 ripe avocado
DIRECTIONS
- Boil the jalapeños, white onion, tomatillos, and garlic in plenty of water until soft, about 8-10 minutes.
- Once soft, drain the water and let the vegetables cool.
- Add the cooked vegetables to a blender or food processor.
- Add the fresh cilantro, salt and black pepper.
- Blend until smooth.
- Add the avocado. Blend again until the avocado is incorporated fully and the salsa is a nice, smooth consistency.
- Serve atop your favorite tacos. Also goes great in a burrito or on top of eggs.
